Mashed Potato Casserole

    4 lbs. Red Potatoes, Peeled and cubed
    16 oz Sour Cream
    2 cups Shredded Cheddar Cheese
    1 stick Butter, sliced
    Salt and Pepper
    Non-stick spray
    Splash of milk (as needed)
    Real Bacon Bits (optional)
    Chives (optional)


    Peel and cube about 4 lbs. of red potatoes and place in large
sauce pan of water and boil until potatoes are fork tender.
Preheat oven to 350 degrees.

    Drain potatoes and turn into large mixing bowl. Mix on low
speed until potatoes are slightly lumpy. Add 1 1/2 cups of
cheese, all of sour cream, and butter slices. Add salt and
pepper to taste. Mix until smooth. Add splash of milk as
needed to make potatoes creamier.

    Spray large casserole dish with non stick spray and empty
potatoes into dish. Smooth out and top with remaining 1/2 cup
of cheese, sprinkle bacon bits and chives as desired. Bake in
oven for 20 minutes. Serve hot..
