Mix together 1 cup of sugar and 1 egg... beat well... add 1 cup of peanut butter and 1 tsp. vanilla extract. Mix on high for 1 minute or until evenly mixed... spread out and inch away on a non-greased cookie sheet... bake for 10-12 minutes. Take off of cookie sheet immediately to avoid over cooking...
