Crock Pot Chicken

Ingredients, Recipe & Directions

2 TBS frozen orange juice
2 Cups chicken stock
1 TSP. salt
1/4 TSP. pepper
1/2 Cup tomato paste
2 TBS soy sauce
2 TBS brown sugar
2 Cloves garlic, minced
Dash of allspice

    The night before, mix together the marinade in a large closable container and add 4 lbs. of chicken breasts & thighs. In the morning, place chicken and marinade in crockpot on low, covered.

1/4 lb. mushrooms, sliced
2 TBS margarine or butter
11 oz. mandarin oranges, drained
1/2 large bell pepper, sliced
1/3 TSP. ground ginger
3 TBS cornstarch
1/4 Cup cold milk
1/4 Cup cold water

    About 6 hours later, turn cooker on high, sauté mushrooms in butter, add them with juices, oranges, ground pepper, ginger and stir thoroughly. Mix together the cornstarch, milk and cold water and slowly add into crockpot, stirring until mixture thickens a bit. Simmer 15 - 30 minutes.
    It's a really great recipe, no real time involved.
